Chia Seed Pudding with Fresh Strawberry Puree and Coconut Milk

A taste of something tropical…and amazing.

This is good for a week and if you get sick of eating this as a pudding you can still use it in a green smoothie for breakfast in the morning!

Ingredients

1/ 2 cup chia seeds
1 cup strawberry purée, fresh or frozen (all this is is frozen or fresh strawberries thinned out with a touch of water and blended! Nature’s natural sugar!)
1 cup coconut milk

1 teaspoon cinnamon

Directions

Combine everything in a mason jar and refrigerate for three hours! Good for a week!

Frozen banana ice cream

 

So this is delicious and you don’t need anything besides a banana and a blender for it! I added some raw maple almond butter but I think there are so many awesome different combinations that I want to try later!

Here is the recipe for this version:

2 frozen bananas, sliced

1 tablespoon raw maple almond butter

Directions

Pulse the frozen banana with the raw almond butter, scraping the sides of the blender down so that everything is a creamy consistency!
