Strawberry Coconut Smoothie

Take care of yourself.

 

Ingredients

1 cup spinach or baby kale, green of your choice

1 cup strawberries, fresh or frozen

1/2 cup almond milk or coconut milk, as needed

2 teaspoons unsweetened coconut

1 teaspoon cinnamon

Directions

Blend and if it is too thick, add more water or almond or coconut milk.

Blackberry Coconut Smoothie

A great way to incorporate more antioxidant rich berries into your diet and the healing power of some greens to start your day.

Ingredients

1 cup spinach or kale (chop the kale finely if possible if you do not have a high powered blender for easier blending)

1 cup blackberries (I used blackberries because they were all I had on hand and I love the taste of blackberries but this would be good with strawberries or raspberries too)

½ cup almond or coconut milk

1 banana, sliced

½ teaspoon cinnamon

1 teaspoon chia seeds

Directions

Blend and love.

Parchment Paper Salmon with Kale and Mushrooms

Parchment paper fish gives the best flavor and keeps all the moisture in the bag, which means it is delicious and amazing, and even better: easy.

Ingredients

1 serving of fresh salmon

1 cup raw kale, cut into bite size pieces with tough stems removed

1 cup baby portabella mushrooms. sliced

Sea salt, to taste

Freshly ground black pepper, to taste

2 wedges lemon

2 tablespoons your favorite white wine

1 teaspoon olive oil or truffle oil

Parchment paper

Directions

Preheat oven to 350 degrees. Assemble all ingredients except seasoning in parchment paper and wrap well.

Add the wine, oil, and seasoning last.

You can fold the inner and outer edges to create a packet. Don’t worry if the packet ends up opening because the ingredients will cook beautifully anyway. Add the wine, oil, and seasoning last.

This should take 10-12 minutes!

Kale Chips with Crisped Parmesan

I have been on a kale chip craze this week and experimenting with new flavors. What kind of kale chips do you guys usually make?

Ingredients

4-5 cups kale, chopped, tough stems removed, washed, and dried

1/4 cup shaved parmesan

Salt, as desired, optional since parmesan is salty

Pepper, as desired

Coconut oil spray, coconut oil, or olive oil

Directions

Preheat oven to 350 degrees. Spray pan with oil of choice and spread kale in a thin layer on top. Top with more sprays of coconut or olive oil and salt and pepper as desired. After 10 minutes of baking, top with parmesan cheese and bake for a couple more minutes until cheese is melted and crispy.

Peach Banana Green Smoothie

The flavor of this one is out of this world guys, it has been my obsession for a week or so now.

Ingredients

1 banana

1 cup peach chunks

1 cup baby spinach or kale, packed

1 tablespoon peanut butter

1 cup soy/nut milk

SUPERFOOD BOOST

1 teaspoon bee pollen, optional

1/8 teaspoon cinnamon, optional

1 teaspoon chia seeds, optional

1 teaspoon goji berries, for garnish
