Apple Pear Green Smoothie

Ingredients

1 apple, chopped

1 pear, chopped

1/2 banana, sliced

2 cups spinach

Chia seeds

Filtered water, till the smoothie is thin or thick enough for your taste

Cilantro, to taste, and it removes toxins in the body

Directions

Blend all ingredients well and serve immediately.

Garlic Red Quinoa Crusted Shrimp

This is a great recipe when you want to serve a protein packed meal! Serve with brown rice and some veggies for a fun dinner or on its own with a side of steamed spinach!

 

Ingredients

1/2 pound shrimp, cleaned and shells removed

1 cup red quinoa, cooked and chilled

1 teaspoon garlic

1 teaspoon olive oil

Pepper

Directions

Lightly coat the shrimp with olive oil. Mix red quinoa with garlic. Dip each shrimp into the red quinoa mixture and sear. Serve on a bed of raw greens, with brown rice, or on its own as an appetizer!

Cocoa Banana Smoothie

Buy some unsweetened cocoa powder, I PROMISE YOU WILL ADD IT TO EVERYTHING. This is a great post workout smoothie!

Ingredients

1 banana

2 tablespoons unsweetened cocoa powder

1/2 cup almond milk

Chia seeds

1/2 cup plain greek yogurt

Honey, to taste

4 ice cubes

Directions

Combine all ingredients in a blender and serve immediately!

Greek Yogurt Chicken Salad

I love chicken salad and this is a great tasting version of a classic! Enjoy!

Ingredients

1 cup shredded chicken

3/4 cup plain greek yogurt

1/4 cup chopped celery

Salt

Pepper

2 tablespoons lemon juice

Directions

Combine all ingredients and serve on whole wheat toast or crackers! Feel free to also serve with red pepper spears or in bell pepper cups!

Spicy Parmesan Cauliflower

A great alternative to baked potatoes! Even though I love a good baked potato once in a while!

Ingredients

2 cups chopped cauliflower

1 tablespoon red pepper flake

1 teaspoon cumin

1 teaspoon chili powder

1/4 tablespoon white pepper

Directions

Coat the cauliflower in spice mixture evenly. Add a small amount of olive oil and bake in a 400 degree oven for 15 minutes.

Enjoy!

Kale Salad with Pine Nuts and Avocado

I love a good salad and this one hits the spot like none other. I think it is my love for everything kale and avocado. The pine nuts are an addiction, and feel free not to use them in this recipe, since they are a tad expensive, but the taste does really rock your taste-buds!

Ingredients

2 cups kale washed and stems removed

1/4 avocado, mashed with lime juice and pepper

1/4 cup chopped tomato

1 handful pine nuts, toasted

Directions

Combine all ingredients well and serve!

Oatmeal Pumpkin Spice Loaf

I adapted this recipe from FitSugar so that it does not have any eggs and I replaced the sugar with brown sugar. Hope you like this adaptation! Here is the original recipe.

1 can organic pumpkin (I used a generic can from Trader Joe’s)

1/4 cup liquid egg whites and 2 tablespoons flaxseed to substitute for 4 eggs, or you can use 4 eggs if you love eggs

1/3 cup applesauce

2/3 cup water

2 1/3 cups whole wheat flour

1 cup rolled oats

1 3/4 cups brown sugar

2 tablespoons baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

3 or 4 ground cloves

Mixed Berry Oatmeal Bake

This one is similar to the Apple Cinnamon Oatmeal Bake, but the fruit filled kind! Hope you enjoy!

Ingredients

2 cups rolled oats

1 cup frozen mixed berries, thawed

2 teaspoons chia seeds

1 teaspoon honey

1 cup almond or soy milk

2 tablespoons liquid egg whites

1 teaspoon greek plain yogurt

Ingredients

Spray a pan with PAM and preheat an oven to 350 degrees. Mix all ingredients in a mixing bowl except for honey. Combine all ingredients and add honey to the finished product! Bake for 15-20 minutes.

Apple Oatmeal Bake

Baked oatmeal is an amazing invention! Bake it once and you can have it for the week! Great for busy people who need to grab their breakfast and can’t make time for it everyday! And I bet you have all the ingredients in your pantry already.

Ingredients

1 cup apples, diced (I used a Pink Lady for mine)

2 cups rolled oats, steel cut

2 teaspoons cinnamon

1 tablespoon honey

2 teaspoons chia seeds

1 cup almond or soy milk

1/4 cup liquid egg whites

Directions

Mix all ingredients except for the honey together. Add in a baking dish sprayed with PAM and bake like a cake for fifteen minutes, 350 degrees! Add honey on top and serve hot. Refrigerate for the week and serve up a slice every morning for breakfast or serve a group of people!
