Strawberry Coconut Smoothie

Take care of yourself.

 

Ingredients

1 cup spinach or baby kale, green of your choice

1 cup strawberries, fresh or frozen

1/2 cup almond milk or coconut milk, as needed

2 teaspoons unsweetened coconut

1 teaspoon cinnamon

Directions

Blend and if it is too thick, add more water or almond or coconut milk.

Berry Minty Salad with Mixed Berries, Neem Honey Drizzle, and Pink Himalayan Salt

Hello happy healthy readers,

I hope everyone had a good Memorial Day Weekend! I know I did, and it was that much harder coming in to work today. But a day off in the beginning of the week means the weekend is that much closer. I meant to send a package of goodies over to my friend, and I did a great job with her letter but I am still figuring out the perfect dessert that flies well. Let me know what you guys think and if you have any suggestions!

The perfect summer berry salad with pink himalayan salt and neem honey drizzle. I am sure that I am not the first one to combine salt and fruit together, but the ingredients were on my shelf and I knew there was no going back.

Salt makes sweet taste sweeter. I guess you could apply that to life as well. I am sure This was also a hit at the BBQ I went to yesterday with some old friends and a good catch up session. I tried veggie hot dogs for the first time and I was very impressed. There was great company and there was good wine.

Try to use organic honey and organic berries.

Ingredients

2 cups mixed berries, I used blackberries, blueberries and strawberries because it is what I had on hand but you can use your favorite mix

1 tsp pink Himalayan salt

1 tablespoon neem honey

1/4 cup mint leaves, or more to taste

Directions

Wash berries and pat dry. Add honey to taste and mix, top with mint leaves and salt. Mix well and serve. This salad gets better the longer you let the salt break down the berries. Good for a day or two.

Can be made vegan if you sub agave for the honey.

Berry Blast Muscle Recovery Pops

As you all can see, I am on a pop phase. Making your own eliminates a ton of ingredients that you would normally have in premade pops. These are delicious, creamy, and great for after a workout especially.

Ingredients

1 cup berries, frozen (I used raspberries and strawberries)

2 tablespoons coconut water

1 cup soy milk, unsweetened or vanilla

1 banana, frozen

1 cup spinach

Directions

Blend and pour into popsicle molds.  Freeze 3 hours.

Eziekel French Toast with Sliced Berries and Cinnamon

Dear Breakfast,

I am utterly obsessed with you.

Often, the mornings are hectic for me, and with Septa being difficult as usual, my mornings are definitely times I want to be left alone for the most part. When I don’t have to rush to work, which probably will never happen because I am probably never going to be a morning person, this is the go to breakfast. 

I have had to settle for making it on weekends.

But this French toast makes my life complete. You can substitute the ingredients you like, but I am going to give you the vegan version.

Ingredients

2 slices original Eziekel bread, or cinnamon raisin if you are feeling fancy (I get mine from Trader Joe’s but it is a gluten free bread made with rice and lentils, and it is a sprouted whole grain) Feel free to use any bread for this, I just go gluten free because my body hates me if I don’t for the most part, so I save the days I suffer for when I am not cooking at home.

1/2 cup unsweetened almond milk or soy milk 

1/2 banana

A pinch of Pink Himalayan salt

A pinch of nutmeg

1/2 teaspoon vanilla extract

2 teaspoons cinnamon

6 strawberries, washed and sliced

1/2 cup fresh blueberries

2 teaspoons orange blossom honey or pure maple syrup

1 teaspoon Earth Balance or PAM, for skillet

Chia seeds, optional

Directions

Mash banana with the salt, nutmeg, milk, and cinnamon.Toss in bread to the wet mixture, if you want a nice crunchy toast, feel free to toast the toast first. Grill in a skillet until both sides are nice and brown. Top with more cinnamon and honey or maple syrup if desired.Top with berries and prepare to watch the rest of the world disappear, until  you finish this awesome breakfast.

Vanilla Strawberry Green Smoothie

Delicious and you can make it in ten minutes. Perfect for those days that you are running behind and still want to eat a great breakfast. That is one of my unbreakable rules, I never ever skip breakfast.

Ingredients

5 strawberries, diced

2 handfuls baby spinach leaves

1/2 banana, diced

1/2 cup vanilla Greek yogurt

1 cup coconut water

1 tablespoon Chia Seeds

Directions

Blend all ingredients until smooth!

Another berry avocado favorite!

Ingredients

1/4 avocado, diced

1 cup strawberries, chopped

1/2 cup unsweetened almond or soy milk

Filtered water, or two ice cubes

Chia seeds

1/2 cup spinach

1/2 banana

Directions

Blend well and serve!

1 teaspoon honey, or agave

Directions

Blend and enjoy!
