Strawberry Coconut Smoothie

Take care of yourself.

 

Ingredients

1 cup spinach or baby kale, green of your choice

1 cup strawberries, fresh or frozen

1/2 cup almond milk or coconut milk, as needed

2 teaspoons unsweetened coconut

1 teaspoon cinnamon

Directions

Blend and if it is too thick, add more water or almond or coconut milk.

Green Superfood Smoothie

A go to combination of mine. The pineapple adds all the sweetness you need and you will have boundless energy after blending. I am a self professed coffee addict, there is nothing like coffee that gets my gears running after a night of restless sleep, but this green smoothie competes with how much it wakes me up.

Ingredients

2 cups spinach, baby leaves, or 1 cup frozen spinach, lightly thawed

2 tablespoons of chia gel (chia seeds soaked in water or coconut water for several hours, good to have on hand in the fridge, and lasts a week!)

3 pineapple rings, or 1 cup pineapple chunks

1/2 cup blueberries, frozen or fresh

1 teaspoon spirulina

1/2 cup unsweetened almond milk

2 tablespoons goji berries

Directions

Blend well and enjoy!

Berry Salad with Red Quinoa and Raw Honey

This Berry Salad has the power punch of quinoa to keep you feeling fuller, longer. I love this in the morning as well, since you can serve the quinoa warm and add the berries for a delicious sweet punch on top.

Ingredients

Serves 1

1/4 cup uncooked quinoa

1 cup unsweetened almond milk or rice milk

Pink Himalayan salt, about 1/2 teaspoon

1 teaspoon cinnamon

1 cup assorted berries, I used raspberries, blackberries, and blueberries

1/2 tablespoon raw honey

Directions

In a saucepan on medium heat, simmer almond/rice milk. Add rinsed and dried uncooked red quinoa to milk and cook until quinoa is tender, about 12 minutes on medium heat. Keep an eye on it so that it does not spill over. Add cinnamon and salt and mix well. Drain remaining milk after quinoa has cooked. Chill quinoa if you would like a cold salad. Top with raw honey and berries.

Tropical Mango Chia Seed Pudding

Reminds me of a tropical island somewhere, even if I am still just in an over air conditioned office.

Ingredients

1/2 cup mango puree (mango blended in a blender)

1/2 cup pineapple chunks

2 tablespoons chia seeds

1/2 cup unsweetened almond milk/rice milk

 1 tablespoon unsweetened coconut

Directions

Mix all ingredients together in a glass jar and let sit overnight or 4 hours if you are in a pinch. Enjoy!

Kale Mint Smoothie

With the help of pineapple, this little guy is refreshing and sweet.

Ingredients

1/4 cup almond milk

1/2 cup pineapple juice or coconut water

1 cup kale, stems removed, washed and torn into pieces

A couple sprigs of mint, depending on how minty you like your smoothie

2 pineapple rings, I usually use the canner version for convenience

1/2 cup blueberries

Directions

Blend and adore the minty sweetness of this green smoothie!

Pistachio Avocado Pops

This one is creamy, delicious, and easy.

2 ripe avocados

1 cup unsweetened almond milk

Agave, to taste

1/2 cup crushed pistachios

A dash of Pink Himalayan salt

Directions

Blend and pour into molds! Freeze for at least 3 hours.

The Black Swan

This one is inspired by a cocktail, but hey this is the most antioxidant filled juice I have come up with in a while. There’s a smoothie version to for all of you guys that like smoothies over juices or for those who don’t have a juicer!

JUICE

2 cups fresh blackberries

1 wedge or 2 wedges lemon, depending on how much you love lemon

1 beet, skin removed, washed 

1 apple

Directions

JUICE ME. Best when you drink this as soon as possible after it’s made but put in a mason jar filled to the top if you want to keep it for a day. I would drink this within 24 hours.

SMOOTHIE

1 1/2 cups coconut water

3 tablespoons almond milk, unsweetened

5 almonds

1 cup frozen blackberries

1 tablespoon coconut oil. melted

1/2 cup pineapple chunks

Directions

Blend me.

Eziekel French Toast with Sliced Berries and Cinnamon

Dear Breakfast,

I am utterly obsessed with you.

Often, the mornings are hectic for me, and with Septa being difficult as usual, my mornings are definitely times I want to be left alone for the most part. When I don’t have to rush to work, which probably will never happen because I am probably never going to be a morning person, this is the go to breakfast. 

I have had to settle for making it on weekends.

But this French toast makes my life complete. You can substitute the ingredients you like, but I am going to give you the vegan version.

Ingredients

2 slices original Eziekel bread, or cinnamon raisin if you are feeling fancy (I get mine from Trader Joe’s but it is a gluten free bread made with rice and lentils, and it is a sprouted whole grain) Feel free to use any bread for this, I just go gluten free because my body hates me if I don’t for the most part, so I save the days I suffer for when I am not cooking at home.

1/2 cup unsweetened almond milk or soy milk 

1/2 banana

A pinch of Pink Himalayan salt

A pinch of nutmeg

1/2 teaspoon vanilla extract

2 teaspoons cinnamon

6 strawberries, washed and sliced

1/2 cup fresh blueberries

2 teaspoons orange blossom honey or pure maple syrup

1 teaspoon Earth Balance or PAM, for skillet

Chia seeds, optional

Directions

Mash banana with the salt, nutmeg, milk, and cinnamon.Toss in bread to the wet mixture, if you want a nice crunchy toast, feel free to toast the toast first. Grill in a skillet until both sides are nice and brown. Top with more cinnamon and honey or maple syrup if desired.Top with berries and prepare to watch the rest of the world disappear, until  you finish this awesome breakfast.
