Broccoli Avocado Salad with Pine Nuts and Lime
Delicious and full of heart healthy fats. Take this to work everyday and your body will thank you.
Ingredients
1 cup broccoli
1/4 avocado, cubed/diced, however you like it
2 tablespoons of lime juice
Pink himalayan salt, to taste
2 teaspoons apple cider vinegar
1 teaspoons extra virgin olive oil
Pine nuts, to taste
Freshly cracked black pepper, to taste
Directions
Combine lime juice, ACV, olive oil, pepper and salt. Whisk well and pour over broccoli and avocado. Top with pine nuts.
Simple and tasty.

Quick Working Lunch
To save time on Mondays, I bring in lunches for the week after a bunch of cooking on Sundays. This week I made some shrimp fried rice, some beans with spices, and I brought in an avocado to cut up for lunch on top. Featured here: brown rice with shrimp, peas, broccoli and low sodium soy sauce, cauliflower, beans, mushrooms, and avocado!
Watercress Broccoli Soup
I got the original recipe from Gwen’s GOOP site!
Perfect detox soup.
Ingredients
2 1/2 cups filtered water
2 cups broccoli chopped and steamed
2 teaspoons olive oil
1 garlic clove, minced
Pepper
Juice from 1/2 a lemon
2 cups watercress
2 teaspoons red chili flake
Directions
Cook garlic in olive oil and add broccoli and watercress. Add the water and bring to an almost boil. Mix in juice from lemon. Stir. Turn off heat and blend soup. It will be hot so make sure that you are careful when you are blending.

Spicy Tofu with Red Quinoa
This is an all time favorite. I have been on this red quinoa obsession lately and this is the best combination yet.
Ingredients
1/2 cup cooked red quinoa, you can find this awesome blend from Trader Joe’s and other health stores!
1/4 cup edamame, shelled
1/2 cup broccoli, steamed
1/5 block tofu, cooked in a pan with olive oil and salt and pepper to taste
Juice of 1/2 lemon
1 teaspoon red chili flake
1/4 cup spinach, chopped
Directions
Heat all ingredients together and serve! Also great as a leftover!
