Balsamic Soaked Watermelon with Feta and Mint

Sweet and salty flavors for the win this summer!


2 cups chopped watermelon

1/4 cup crumbled feta

2 tablespoons balsamic

Mint, to taste


Combine everything together and let sit overnight.

Watermelon Feta Mint Summer Salad

Salty sweet and refreshing.


2 cups chopped watermelon

2 tablespoons chopped fresh mint

1/4 cup nonfat or reduced fat feta

Pink himalayan salt, to taste

2 teaspoons lime juice


Assemble all ingredients in a bowl and let sit overnight so the flavors all infuse together.

Kale Mint Smoothie

With the help of pineapple, this little guy is refreshing and sweet.


1/4 cup almond milk

1/2 cup pineapple juice or coconut water

1 cup kale, stems removed, washed and torn into pieces

A couple sprigs of mint, depending on how minty you like your smoothie

2 pineapple rings, I usually use the canner version for convenience

1/2 cup blueberries


Blend and adore the minty sweetness of this green smoothie!

Kale Chia Seed Smoothie

I love kale. I love baking it, putting it into my smoothies and my soups, and I love how versatile of a green it is. It is not as loved by me as my spinach smoothies because I dont usually add it with fruit, but I think of it as spinach’s savory cousin.

This one will have you loving your life.

1 bunch kale

1 cup almond milk

1/2 cup orange juice

2 tablespoons chia seeds

Mint leaves, to taste

A dash or orange blossom honey


Blend and love.

Vitamin C Shot Juice

So relevant right now! Everyone is either recovering from a cold or somewhat sick or still has a sore throat…like I do these days! I need to make a couple shots of this again tomorrow. Right now, I am playing Say Anything, watching the snow fall, and texting my best friend who is still in college, and who I miss constantly.

I made a batch for my family and they loved it!


4 mandarins

3 handfuls spinach

2 kale stems

3 sprigs mint

1 grapefruit, skin removed before you put it in the juicer

Green Glowing Juice

Another winner! This one is crisp, clean, and oh so refreshing! I wish my juicer did not take so much time to clean because it makes my hectic mornings a bad time to make a freshly prepared juice! I have been sticking to my blueberry pineapple raw almond butter spinach combination and it has served me well! There is nothing like some great freshly pressed juices after work and yoga and now some classes I have been taking. My whole family has been benefiting from it and we have had a lot of fun trying new juices together. It is my new goal two make as many as possible so that I don’t get bored with them throughout the week. In other useless accomplishments that make me very happy, I have nailed my makeup routine to 10 minutes or less and I wear way less of it, and I can sleep in in the morning (for me sleeping in is maybe 7:15am) because I got a to go smoothie cup. I simply blend and pour and then I am out to the door to catch my train. Hope you guys like this juice as much as I do!

1 bunch dinosour kale

1 apple

1 pear

2 springs mint

2 pineapple rings


Juice and rock your life.

Sweet Honey Brown Rice with Strawberries

This is basically rice pudding for breakfast.


1/2 cup brown rice, cooked (Try the boil packs)

4 strawberries, sliced

1 cup vanilla soymilk, or unsweetened soy milk with a dash of vanilla extract

1 teaspoon honey

1 teaspoon cinnamon

Mint, for garnish, optional


Simmer brown rice for five minutes with honey, cinnamon, soymilk and top with strawberries. Add mint if desired.
