Vanilla Almond Quinoa Bake

Inspired by one of my favorite Special K combinations!

Makes breakfast for the whole week!

2 cups cooked quinoa

1 cup vanilla soy milk or vanilla almond milk

1/2 cup almonds, toasted

Drizzle of orange blossom honey

2 teaspoons cinnamon

Dash of Pink Himalayan Salt

Directions

Mix everything in a baking dish greased with PAM and bake for 15 minutes. Serve hot, or easy to reheat throughout the week for a simple breakfast that is great on calories and keeps you full all morning!
