Red Quinoa Edamame Salad

A work favorite and one I keep coming back to. This one transports especially well in a mason jar! I recommend buying one and using one for salads because I have never seen any other jar work as well for layering a salad and it being as portable!

Ingredients

1/4 cup edamame

1/4 cup red quinoa

1 cup spinach, packed

3 tomato slices, cut in half

2 teaspoons olive oil

2 teaspoons apple cider vinegar

Salt

Pepper

Directions

Mix olive oil, apple cider vinegar, salt and pepper in a separate bowl. Layer ingredients in a mason jar, with the dressing on the bottom first. Top with edamame. When ready to eat, open the jar and fork out into a plate. I usually have paper plates at work.
