Pesto Shrimp with Brown Rice in Foil


6 large shrimp, cleaned and out of their shells

1 cup cooked brown rice

1 tablespoon prepared pesto

2 artichokes in water, chopped

1 cup mushrooms, chopped

1 cup spinach

Black pepper

1 teaspoon minced garlic

2 sheets of foil

Lemon juice


Layer the brown rice, pesto, mushrooms, artichokes, spinach and garlic in foil packet. Layer shrimp last. Add lemon juice and black pepper on top. Bake for 35 minutes or until shrimp are pink!
