Cheesy Garlic Quinoa

A healthy upgrade from the not so healthy comfort food.


1/4 cup quinoa

1 cup vegetable broth

1/4 reduced fat sharp cheddar  cheese

2 tablespoons cottage cheese

Red pepper flake

1 teaspoon minced garlic in water

1 teaspoon olive oil


Boil vegetable broth and add uncooked quinoa when it comes to a soft boil. Cook according to package directions. Stir  quinoa into vegetable broth until it is all absorbed. Add the cheeses and the garlic. Add olive oil and add red pepper flake if you if desired.
