Spinach Chickpea Balls

I have a thing for spinach which is probably obvious in all of these posts. These are great to eat with a bed of arugula or mesclun.


1 egg

2 tablespoons panko or whole wheat breadcrumbs

1 teaspoon lemon juice

1 artichoke, minced

2 cups frozen spinach, thawed

1/2 cup chickpeas


1 teaspoon italian seasoning


Heat oven to 375 degrees. Mix the frozen spinach with the chickpeas and smash together. I think with your hands is best. Add lemon juice, artichoke, pepper, italian seasoning, and mix well. In a separate plate, have breadcrumbs ready. Roll the spinach chickpea mixture into the breadcrumbs and place on a cookie sheet. Bake until breadcrumbs are golden brown, about 15 minutes.
