Egg White Quesadilla with Sriracha and Veggies

One of my favorite condiments that works with everything, especially eggs!



1 serving egg whites, 1/4 cup

1 brown rice tortilla

1 teaspoon sriracha, or to taste

1/8 cup sauteed mushroom slices

1/2 cup spinach

1/8 cup red bell pepper, chopped


Cook egg whites in a nonstick pan. In a seperate nonstick pan, brown mushroom slices, spinach, and red bell pepper in garlic infused water (I usually take the water from my minced garlic can, it is an easy alternative to using heavy oils and you get that same flavor). Warm brown rice tortilla in the microwave for ten seconds. Add gg white and veggies to the tortilla and top with sriracha. Fold over tortilla.
