Sweet Potatoes with Spinach, Cheddar and Greek Yogurt

A packed meal or side if you want to split it with someone! I would serve this with a crisp spinach salad with dried cherries and gorgonzola. Sweet potatoes, yogurt, and cheddar are all fabulous for you and even better together.

Ingredients

1 small sweet potato

1/4 cup nonfat shredded sharp cheddar

Pepper

1 dollop plain greek yogurt, Chobani

1/4 cup spinach

Directions

Steam or bake sweet potato. Cut in half and layer spinach and cheese. Add the dollop of plain greek yogurt. Top with freshly ground black pepper if you desire.
