Spinach Artichoke Mac and Cheese

I love the dip but I know it is not too good for me so I tried to healthily update it into a pasta form, which is not too bad! Let me know what you think.


1 cup whole wheat pasta (I like the ribbed penne for this one or cavatappi)

4 artichokes, diced

1 cup spinach

1 teaspoon minced garlic

1/2 shallot, minced



1 teaspoon cayenne

1/2 cup nonfat white cheddar

1/2 cup cottage cheese

1/8 cup greek plain yogurt

1 tablespoon olive oil


Boil pasta according to package directions. Drain. In a saute pan add olive oil. Heat. Add the shallot, spinach, artichokes, onion, basil, parsley, garlic, and cayenne. Add the nonfat white cheddar, cottage cheese, Greek plain yogurt, and the cooked vegetable mixture to the warm pasta. Stir through and heat until cheese is melted.
