Kale Avocado Salad

I love these two green mean machines. Avocado can be used for a variety of things, from replacing the butter in your dessert recipes to spreading on your toast for breakfast or a quick snack. This salad is creamy and luxurious, and the avocado acts like a dressing.



1/4 avocado

2 bunches kale

2 teaspoons lemon juice



1/2 cup diced tomato

1/4 cup red pepper, chopped


Mash the avocado with the lemon juice, salt and pepper to taste. Rub the mixture over freshly washed kale and add tomato and red pepper. Chill for a hour and serve!
