Quinoa Quesadillas

Quinoa is magical. It is the most fun grain to cook with, at least in my opinion and it is great sweet or savory. I was quizzical about adding it to a quesadilla but it is actually addicting and I love the texture! I will have some breakfast qunioa recipes coming up so stay tuned for those!


1/8 cup of cooked quinoa

1/8 cup of cooked tofu, diced

1/8 cup of broccoli florets

1 teaspoon hummus

1 habenero pepper with dash of lime tortilla

1/8 cup sharp reduced fat cheddar cheese


Layer the ingredients together in the tortilla and press in a panini press or grill or on the stove with a pan on top until the quesadilla is cooked through!
