Poached Egg on Whole Wheat Toast with Hummus and Sprouts

Happy Thursday! I have a fondness for that egg yolk yellow. In fact, it is one of my favorite colors and one of the reasons I like to make this as a breakfast or lunch. Eggs are amazing to include in your diet! They have gotten a bad rap in the past but if you eat eggs in moderate protions during the week, you are golden. They only have 73 calories! Ideally, eat four or five a week, one a day. Poached eggs are the lowest calorie way of cooking eggs and it is so easy.

Here’s what you need:

1 egg, organic if possible, fresh

1 slice mutligrain wheat bread, toasted

1 teaspoon apple cider vinegar

1 tablespoon hummus

1/8 cup sprouts

Pepper

Directions

Boil fresh water on the stove. Add apple cider vinegar. Crack egg into a small glass. When the water is boiling, stir the water with a spoon and pour in the raw egg from glass. Lower heat to a moderate temperature and keep an eye on the egg. Try to keep the egg as together as possible. This process to cook the egg should only take a few minutes and do not worry if it does not come together perfectly the first time you try it! When the egg is poached, dry off with a paper towel and set it on a plate. On the toasted wheat bread, spread hummus and top with sprouts. Add poached egg. Add freshly cracked black pepper.
