Tofu Spinach Salad with Poached Cherries, Pistachios and Brie

This pleasant combination of flavors are delicious together and provides a sweet and savory salad. There is a little bit of brie but feel free to substitute a different cheese. I used brie because it is mild and creamy.


Serves 2

2 cups spinach

1/3 cup poached cherries (to do this all you have to do is boil cherries, this concentrates the flavor)

1/8 cup pistachios, crushed

1/8 wheel of brie, cut into thin wedges

1/8 block of extra firm tofu, cut into triangles and seared with light olive oil and garlic


Combine all ingredients and serve immediately.
